When I started the gluten-free diet I thought I would be depriving myself of all the really good desserts, bread, and pizza. However, the benefits re huge and there are now many gluten-free options that are as good or better than options with gluten. I started to see the benefits of a gluten-free diet right away.
In today's world where the body needs to stay strong to fight infection and viruses, a diet that avoids inflammation and having a huge impact on the immune system is highly beneficial.
Something to keep in mind, when switching to a gluten-free diet you will be cutting foods that are natural or enriched sources of vitamins and nutrients, like Iron, Calcium, Fiber, Thiamin, Riboflavin, Niacin and Folate. You will need to work on getting those nutrients from other foods. Working with a healthc coach, nutritionist or functional doctor for all lab tests will help you figure out where your body is at and what your body is missing.
